Nishiki

Ingredients:

3 cups of rice soaked in 4 cups of water for 15 minutes

1/4 cup of rice vinegar

Instructions:

Bring rice to a soft boil and reduce heat to low. Cover and simmer for 15 minutes or until moisture is absorbed.

Remove from heat and let stand cover for 10 minutes.

Fluff and serve.

For sushi add the rice vinegar and mix.
